You know summer is almost here when we start breaking out the peach cobbler recipes. After living in the American southern state of Georgia for a few years, I gained a fond appreciation of this deep dish fruit pie. The yummy buttery sweet goodness, is a staple in most restaurants there and dinner tables across the south. Always served with a scoop on vanilla ice cream; I have never met a sweet tooth that peach cobbler could not satisfy.
The original version of cobbler is filled with so much refined white sugar and flour, I had to make some adjustments there. Today we are all trying to change up our eating habits to be a tad bit healthier. And now that I have decided to cut down on things affecting my health, there was no question a remake needed to be done to this old favorite. I search for healthier versions of this fruity pie. Some switched out the flour, others just made the change from white to brown sugar. So I kinda did my own thing as usual with inspiration from an Eating Well recipe.
Peaches are one of those fruits that have such a natural sweetness to it that makes reducing the sugar added easier. Southern folks are all about the sweeter the better theory. However, sweetness doesn’t always have to come from sugar. By adding the blueberries as well, there was really no need to pile on all the additional calories sugar provides.
Its was pretty simple to throw together. Just a few steps and you are done. I tossed some of the cut peaches in the greased pan, threw in some berries and poured over the batter. I didn’t even use a blender this time. Its that easy. You can put the fruits on the top of the batter if you prefer. I place mine at the bottom because there is just something about a caramelized peach that I like. Either way, it will be tasty!
½ cup whole-wheat flour
2 ½ tablespoon Agave
¾ teaspoon baking powder
¼ teaspoon salt
½ cup almond milk
1 tablespoon unsalted butter, melted
1 ½ tablespoon olive oil
1 teaspoon vanilla extract
3 ripe peaches, cored and sliced
½+ cup fresh or frozen blueberries
- Preheat oven to 350° F. Lightly grease with butter an 8-inch round baking pan inch and place it in the oven while it is warming up.
- Whisk together flour, baking powder and salt in a large bowl. Add milk, butter, oil, agave and vanilla; mix until combine.
- Remove pan from oven. Place peaches and blueberries evenly onto greased pan. Then pour batter over the fruits ( you can do this the opposite way but adding fruits after the batter has been poured). in the hot pan.
- Bake until golden browned, about 50 minutes to 1 hour.
- Remove from oven and allow to cool on a wire rack for 15 minutes. Serve warm.
